Tomato Abundance: Try some Tomato Soup or Tomato Basil Bread

I found this recipe for Tomato Soup in my 1960s Recipe Box. The broth is unbelievably tasty. Since it’s made without cream or milk, it’s also low in calories. No basil in this recipe.

  • 3 quarts tomatoes (I used half roma and half beefsteak tomatoes)
  • 2 quarts water (I made it without chicken stock)
  • 6 tablespoons onion, chopped
  • 6 tablespoons fresh parsley, chopped
  • 9 tablespoons sugar
  • 3 tablespoons salt
  • A little pepper (1/4 teaspoon)

Boil ¾ hours. Strain and bring to boil and add 3 tablespoons cornstarch. Serve hot.

*For chunky bites of tomato, skin tomatoes first and use hand held mixer before serving. Sprinkle with Parmesan cheese if desired.

  • 1 ¾ cups fresh or canned tomato juice
  • 1 ½ tablespoons sugar
  • 2 teaspoons fresh chopped basil
  • 1 egg, optional
  • ¾ teaspoon salt (omit if using commercial juice)
  • 5-6 cups flour, approximate
  • 1 package of yeast

Blend flour and yeast, put to the side. Mix the rest of the ingredients in a bowl and mix in the flour-yeast mixture. Place in a mixer with a dough hook; knead until dough comes together or knead by hand on floured surface (add more flour as necessary). Dough may be sticky. Place in oiled bowl and cover; allow dough to rise until double. Form into free form loaves or place in prepared bread pans. Allow to rise for additional hour. Brush with egg or milk wash. Bake at 375 for 20-25 minutes. For bread machine, reduce flour to 5 cups and follow machine directions.

Grilled cheese sandwiches go with tomato soup around our house, but there are other choices. Here are some are some sandwich spreads and fillings from the back of a Sunnybank Margarine package from the 1960s. Coldstream Products, head office, Oakland, California

  • *Cream Sunnybank with catsup or chili sauce, and onion salt. Good with meat fillings
  • *Add minced pimiento, dash of Tabasco to Sunnybank. Grand with cheese fillings.
  • *Mix Sunnybank with prepared or dry mustard. Perfect for hot dogs and hamburgers.

Sandwich Fillings

  • *Chop cooked frankfurters fine, mix with sweet pickle relish and mayonnaise.
  • *Mix cottage cheese, crumbled crisp bacon, pickle relish; add salt and pepper to taste.
  • *Combine tuna fish, chopped stuffed olives, lemon juice, dash of Worcestershire.

Lots of sweet summer tomatoes out there! Enjoy them while they last. Found these baskets of tomatoes from Scenic View Orchards in Sabillasville near Thurmont.

    Add a cup of grated carrots to the tomatoes for a natural sweetness, eliminating the sugar.
