Hail to the Kale II

Recently I posted about how kale can do wondrous things for your health. I promised more kale recipes, and I’ve got them for you. The first recipe is for a kale drink, which requires the use of a juicer. Juicing vegetables and then drinking them is even more healthy than eating them in a dish, because your body does not have to break anything down – so you can get the immediate health benefits  Juicing allows for your body to be able to absorb more of the vegetable’s nutrients than eating allows for. The other recipe is for lemon kale pasta, and you can find the recipe here. This dish is absolutely fabulous, and you can add sundried tomatoes or your favorite kind of meat for a variation. I think it’s great with cut up meatballs or spicy chicken sausage links. I really hope you enjoy these kale recipes.

Kale Smoothie with Ginger
Ingredients:
1 3 lb bag of packaged prewashed kale, juiced
Juice of 3 lemons
2 inch cube of peeled ginger root, grated finely (the microplane works well for this)
3 – 4 TBSP of honey
¼ – ½ cup of whole milk

Directions:

Pour the juiced kale, lemon juice, grated ginger, honey, and milk in to a blender. Blend until well mixed. The drink should be enjoyed immediately in order to get the best nutritional value from the kale. Serve over ice If you would like it to be more chilled.

*Please note that depending on the type of juicer you have that juicing kale can be a pretty lengthy process. It took me 30 minutes to juice the 3 lb bag of kale…*

I made a very tasty white bean and kale soup this evening for dinner. That recipe will have to be put on the back burner for a while, but I will eventually share it with you. Right now I’m thinking, enough with the healthy stuff! My next post is leaning towards one of my favorite kinds of cupcakes. Yum.

COOKING TIP OF THE WEEK:

My tip this week is to encourage you to go out and buy a  2-in-1 Lemon and Lime Squeezer for your kitchen if you don’t have one already. My husband and I bought the squeezer with a wedding gift card to Bed Bath & Beyond. It is my absolute favorite kitchen tool. Go buy it – you won’t be disappointed!
